About:240-Hour Visa-Free Transit

UK passport: Korea -> Chongqing (CKG) -> Shanghai (PVG) (layover) -> UK

Exchange student in Korea - would point A count as the original flight from UK to Korea or would it be from Korea

The point A in your itinerary is in South Korea without any doubt. Only the immediate points before and after a mainland China visit matter and only the immediate points are treated as A and C points while mainland China is point B.
