About:240-Hour Visa-Free Transit

SFO to PKX via WUH to HK. Then HK to SFO via CKG

I plan to have two 7 days trips into China.
First trip: fly from SFO to PKX via WUH on day 1. Then take a train to HK on day 8.
Second trip: After staying in HK for a day, I plan to fly to Xi'an on day 1. Finally leave CKG via CAN to SFO on day 7.
I have looked into buying the tickets of the two international sections (SFO to PKX) n (CKG to SFO) together on the same itinerary with a same airline.
Can I use the 10-day free transit-visa twice this way?

Yes, booth of your itineraries are eligible for 240 hour visa free transit. Here I encourage you to use correct terminology because its is not 10 day free transit visa, but 240 hour visa free transit, so there is no visa of any kind at all. It is important to understand that you will have to buy your Wuhan (or Beijing) to Hong Kong (West Kowloon station) train ticket even before you depart from US toward China because you will be asked for one as a proof that you will be really in a transit in both SFO (at the time of your check-in) and in PKX (upon your landing). Also, it is definitely allowed two use 240 hour visa free transit schemes regardless if your flight itinerary is bought on a single ticket (as one booking) or in several, separate and unrelated tickets. So, the nature of the ticket is not important as long as it is your itinerary and the itinerary that you have presented is eligible without any doubt. Have a nice visit to China.
