No, this is not possible. Both departure by high speed train from West Kowloon or MRT are ineligible for 240 hour visa free transit. If you want to travel from Hong Kong toward mainland China and use 240 hour visa free transit, you will have to take a ferry from Hong Kong to Shekou in Shenzhen or to Nansha, located south from Guangzhou. Also, since you have departed to mainland China to Hong Kong you are not allowed to return directly to Hong Kong, but you can return to Macau instead. When you reach Macau you can immediately proceed to Hong Kong. It is important to understand that even before your departure from Hong Kong toward mainland China, you will have to buy your ferry ticket from Shekou to Macau through TurboJet website. Like this you will have eligible itinerary that will look: Hong Kong - mainland China - Macau. All your travels to and from mainland China by ferries. Please, have in mind that you will have to take exactly that ferry from Shekou to Macau tahtb you have bought your ticket for. However, if you plan to visit just Shenzhen, then your best solution is to rely on Shenzhen 5 days visa on arrival. Here you cannot use high speed train to reach Shenzhen, but you can use MTR, but not to Futian, but to Lo Wu / Luohu border crossing. Right at Luohu you will apply and obtain a Shenzhen VOA for 130 CNY (paid by card). This VOA limits you to Shenzhen city limits only and here you can return back to Hong Kong by taking any border crossing or any mean of transport, high speed train included. Now, it is up to you to choose one of these options, based on your real travel needs. Also, this is not 240-hour visa, but 240 hour visa free transit, so there is no visa at all.
