Jessica, we have to clear a couple of details first. If you talk about 5 day Shenzhen visa on arrival you will enter Shenzhen from Hong Kong. After your stay in Shenzhen you can return back to Hong Kong by any mean of transport and continue from there wherever you want, but you can also take a flight from Shenzhen to any country of this world, but your flight out of Shenzhen is not allowed to have any kind of landing within mainland China. In other words, your flight out of Shenzhen to any country different from mainland China has to be of a nonstop type without a landing in mainland China.
There is another option called 240 hour visa free transit. If you want to use this option, you will arrive to Shenzhen from Hong Kong by ferry to Shekou (a neighborhood in Shenzhen). After your arrival you can explore the major part of mainland China freely and without the limits imposed by 5 day Shenzhen VOA. After your stay of 240 hours you will take a flight from mainland China (this in not limited to Shenzhen because you can depart even from Beijing) you have to depart to a third country. In other words, you cannot return directly back to Hong Kong. You can fly to South Korea, Japan, Vietnam, Thailand or eve to Macau or Taiwan. It is important to understand if you want to use 240 hour visa free transit you will need in your hands a flight ticket out of China even before you board the ferry from Hong Kong to Shekou because you will be asked to present one in both Hong Kong and in Shekou when you arrive there.. I hope that this post has cleared some doubts at least a little bit. If not, just write here and we will try to help.
