Anna, you can visit Shenzhen, but taking a through train is not an option. You can take a train until Lo Wu and cross there to Luohu border crossing where you will apply for a 5 days Shenzhen visa on arrival. You are advised to be there at least at 08:30 because the opening time of visa office is 09:00. You should arrive there early in order to avoid the major queues. The price of visa is 130 CNY and you are expected to pay for it by a card, so in a cashless form. You should bring just your passport there and you will fill out the appropriate form. Also, they will take the photo of you at the border crossing.
After your visit to Shenzhen, you can return back to Hong Kong by taking any border crossing and any mean of transport, high speed train included.
