What happened if flight out of Shanghai gets delayed and we exceeded the 144hrs?

You can be totally relaxed in this regard because this is out of your control. In other words, Chinese authorities will tolerate the involuntary overstay without any doubt. Situations of this kind have happened in the past and in that case, those affected just remain in China until the next flight or to final departure of delayed one as if they were perfectly within 144 hour visa free transit.
