Well, to be eligible to continue your travel from Shenzhen to Hong Kong visa free, you will have to stay in Shenzhen for at least 24 hours and 1 minute (based on scheduled arrival and departure times) to be eligible for 144 hour visa free transit and to be allowed to use visa free transit scheme.
Also, you should have in mind that you will have to to use a ferry from Shekou port in Shenzhen to Hong Kong. You will buy your ferry ticket through CKS - Chu Kong Passenger Transport Company website even before you depart for Shenzhen and you will print it out to have it with you in hard copy because you will have to present it at the airport where you will depart Shenzhen for and also upon arrival in Shenzhen. In the end, you will really have to take a ferry you have bought your ticket for. If you were thinking about taking a train, you have to dismiss it because trains are not eligible for this scehem.
For your return back to Shenzhen, you will take a ferry again to Shekou in Shenzhen where you will apply for a 5 days Shenzhen visa on arrival. Please, just have in mind about opening hours of Shekou visa office: 9:00 - 13:00 & 14:30 - 16:30. Beside taking a ferry to Shekou, you can use two overland border crossings of Luohu and Huanggang, but have in mind that the congestion at those crossings is very high, so I do not recommend them. In the end, a price of Shenzhen visa on arrival for Polish citizens is 275 CNY payable by card only.
