Your first itinerary is doable under the following conditions:
- To exit toward Macau you will have to take a ferry from Shekou port in Shenzhen to Macau. You will buy your ferry tickets through TurboJet website and print them out. You will have to have that printout with you at both SGN and CAN.
- In order to return back to mainland China you will have to reach Hong Kong from Macau and take a flight to CAN because the only eligible way how to reach CAN from outside mainland China under 144 hour visa free transit is by air.
- If you do as mentioned above, you will be eligible twice for 144 hour visa free transit in entire Guangdong province.
Your second itinerary is eligible under the following conditions:

- In order to reach Hong Kong after your stay in Guangzhou, you will have to take a ferry to Macau first because you cannot travel by air from Macau because there are no flights from Macau to Guangzhou. Now, you cannot return directly to Hong Kong because you have entered from Hong Kong, so your option is to take a ferry to Macau and then to transfer to Hong Kong.
I understand that this segment with flights from Hong Kong to Guangzhou everything becomes more complicated, but this is simply inevitable because this is the only eligible way.
