Actually, your itinerary is good and eligible, but you should be aware that you cannot take a train! Trains are no longer eligible as a transport option under 144 hour visa free transit scheme. You can take ferry instead. If you decide on this option, you will buy your ferry ticket through CKS - Chu Kong Passenger Transport Company website even before your departure from Taiwan. You will print it out and have at hand for both check-in in Taiwan and upon arrival in Guangzhou.
You should know that you can enjoy your 144 hours within the entire Guangdong province, but you have to be aware that you will really have to take exactly that ferry you have bought your ticket for. After you reach Hong Kong, you can proceed wherever you want.
