Quick query:

Fly in from Bangkok to Shenzhen.
High speed bullet train from Shenzhen to Hong Kong
Fly out to Bangkok. Just wondering if this is allowed.

No, it is not available as the high speed train is not eligible. However, you can change it to taking a ferry to HK from Shenzhen Shekou Port.
