About:How to Travel Between Hong Kong and GuangzhouHow to Travel From Hong Kong to Guangzhou

As a German: During my Hongkong Visit making a trip to Guanghzou without Chines Visa?

We are a german couple and are planning a two week holiday in Hongkong. This is possible without any visa. Question: Do we need a Chines visa for a 1-3 day trip to Guanghzou and the nearby Qingyuan?
Additional question: would Macau be visa free for us, visiting from Hongkong?

You are visa-free to visit HK and Macao.

As for Guangzhou, you can adjust the route to be eligible for Guangdong (including Guangzhou and Qingyuan) 144-hour visa-free transit. You may fly from Germany to Guangzhou directly, then take a ferry to HK. The route HK - Guangzhou - Macao is also eligible, but you need to fly from HK to Guangzhou, then take a ferry to Macao. If you still plan to travel by high speed train or over land from HK to Guangzhou, apply for a visa in advance.
