Unfortunately, you cannot take a train. Train options seem to be a distant past. However, you are allowed to take a flight from Hong Kong to Shanghai and then take a flight to Bangkok. The flights have to be nonstop type.
When you buy your tickets, you will just declare at Hong Kong check-in that you will travel to Bangkok by using 144 hour visa free transit in Shanghai. After a short check of your tickets, you will be allowed to board the plane.
Upon arrival in Shanghai, you will approach dedicated 144 hour visa free transit counter where you will say the same and present your ticket to Bangkok. Also, it is advisable to present at least a booking for the first overnight. After a short check, you will be granted a temporary entry permit (for free) and you will exit the airport. After this, you are allowed to travel and explore the area consisting of Shanghai and Zhejiang and Jiangsu provinces. Please, have in mind that you will have to take exact that flight you have bought your ticket for.
Also, this is not a 144 h visa... This is a 144 hour visa free transit, so there is no visa at all.
