About:240-Hour Visa-Free Transit

Can I use 144 visa free several times

I would fly from Germany to Shanghai, stay there visa free for 6 days, then fly to Hongkong, stay there 3 days, then fly to Shanghai again, stay 5 days then back to Germany.

Yes, you are perfectly allowed to that. There is no limit of how many times you can use 144 hour visa free transit in any particular time frame.
