This is perfectly fine and you are eligible for 24 hour visa free transit both ways. It is true, you did not mention the time required for transit on your return flight, but I assume that you will be for less than 24 hours in Shanghai. I understand that you will be flying on separate (noth through) tickets and this is perfectly fine and acceptable. However, you should be aware that you will have to collect your luggage in Shanghai, apply for a temporary entry permit for free at 24 hour visa free transit counter and then perform your check-in and other formalities for your flight to Hong Kong.
You have right to perform as many as you wish transits of this kind and this is perfectly allowed.
Also, Ram, you should be aware that this is visa free transit, so there is no visa involved of any kind. Please, do not confuse it with temporary entry permit that allows you to exit the airport. This permit is not a visa, but just a permit that allows you to perform formalities regarding your transit formalities and also to travel to the city center if you will have enough time for that.
