30 Day Visa but still need to Stay in Shenzhen China

My question is

I have a 30 day annual business visa, so on the 30 day date from entry into China, I go to the Shenzhen Bay border then -

1. Officially stamped and Leave China
2. Walk through and then Officially Enter Hong Kong
3. Walk out of terminal and turn back towards entering China again
4. Officially leave Hong Kong
5. Then Officially Enter China again and reset the 30 day business visa.

What happens now with the 14 day quarantine in HK? Am I still able to do the above or when I enter into HK will I be told I cant turn back into the terminal to enter China again

You will still be allowed to enter HK if you have an Irish passport. Once you enter HK, however, you can't leave HK for 14 days and will be sent to a place for mandatory quarantine (either a hotel or a "government quarantine center"). This means you won't be able to return to Mainland China (or go anywhere else outside the designated quarantine area) until the 14-day period is over.

Keep in mind that once you return to SZ there may be additional quarantine measures as you have already left Shenzhen. As this thing is quite far from over and you only have a 30 day visa, you should leave for Europe before HK shuts its border completely.
