Your itinerary is definitely eligible for 144 hour visa free transit and you don't need any kind of visa. Of course, I'm assuming that your citizenship is from one of 53 eligible countries. Denmark is eligible, by the way.
You will print out your flight tickets and have those printouts with you. Also, you will declare at check-in in Amsterdam and in Copenhagen that you will travel to Taipei via Guangzhou using 144 hour visa free transit. After a short check of your flight tickets, you will be allowed to board the plane.
Upon your arrival in Guangzhou, you will approach 144 hour visa free transit counter where you will fill out a blue form. Assuming that you intend to stay at your grandparents, you will mention this in the blue form and also the address and a phone number of one of your grandparents. After this, you will get a sticker in your passport and be allowed to exit the airport.
Please, you have to be aware that, if you are staying with your grandparents, you have to make a registration at the relevant police station within 24 hours after your arrival in Guangzhou. You have to be accompanied by one of your grandparents.
Another important detail is that there are no direct flights between Copenhagen to Guangzhou and although this is not a problem, you cannot have any additional stop in mainland China before and after Guangzhou. In other words, you can travel on itinerary:
Copenhagen - Helsinki - Guangzhou - Taipei
But, you are not allowed to travel:
Copenhagen - Beijing - Guangzhou - Taipei
Simply speaking, you are not allowed to have two consecutive stops within mainland China!
When traveling on 144 hour visa free transit, you are allowed to freely travel throughout Guangdong province.
