If your itinerary is:

South Korea - China (one airport) - Indonesia

You don't need any kind of visa if your entire transit time in China is less than 24 hours long counting from your scheduled arrival, until your scheduled departure. If your entire transit time is less than 24 hours, you are definitely eligible for 24 hour visa free transit. Anyway, if your entire transit time is longer than 24 hours for just a minute, you will have to obtain a Chinese transit (G) visa in advance.

You will print out your flight tickets and have those printouts with you. Also, you will declare at check-in in South Korea, that you will travel to Indonesia via China using 24 hour visa free transit. After a short inspection of your tickets, you will be allowed to board the plane.

Upon your arrival in China, you will apply for a temporary entry permit at 24 hour visa free transit counter to be allowed to exit the airport ant to make a short exploration of the city. Also, during your application for the mentioned permit, you will enclose a confirmation of your accommodation booking that you have to have a printout. Anyway, you should be aware that the issuing of a temporary entry permit is always upon discretion of immigration authorities on a day of arrival, although your chances to be granted a permit are really very good.
