About:144-Hour Visa-Free Transit

planning on travel from India to Hong Kong and using the train and bus through china to Vietnam

hello,
my partner French and I German are Currently in India, during our world trip. we would love to visit china around end of December 2019
we would like to do a backpacking trip, but I saw, we need to book all the hotels in advance, which is not possible for us.
so are there any other ways to get an visa and travel through china? Or is the only option the transit visa?
and is this transit visa possible, fly in from India to Hong Kong (or any other city) and travel by road to Vietnam? thanks for your help

No you will need to enter and leave by air. The only trains allowed are the overnight from Hong Kong (not the Kowloon HSR) to Beijing or Shanghai then air exit from there

To get a tourist visa L isn't that difficult.
Just book all the hotels on advance for example on ctrip and after you get the visa, just cancel the hotels (just book hotels with free cancellation).

Common practice.

Indeed, this is by far the easiest way to obtain a visa. Also, you are advised to apply for a visa in Hong Kong. This is by far the easiest way to obtain a Chinese tourist (L) visa. After you have obtained a visa, you can freely choose the way how will you travel between Hong Kong and Vietnam.

thank you so much.
we are pretty free with our way of travel, means we don't have exactas times or dates.
So I can quite randomly book hotels with free cancelation (lets say we start in Beijing and wanna make our way across south the country to vietnam or even to tibet within 1-2 months, what is the maximum stay of days and do I really need a reservation of a hotel for every night? And when we entry china do we need to have a proof- ticket out of china?

Not sure about Europe but in North America they require you to have a hotel reservation for every night (given US and Canadian citizens get 10-year visas, many applicants use dummy bookings if they are staying for more than a week so they can have some flexibility). You also need a confirmed departure ticket for the visa center. As for the maximum validity of visa I have heard that EU citizens can get 60-day double-entry but many end up with 60-day single entry or 30-day single entry (unless you are a British citizen).

once we are in china, lets say and have a flight ticket out from somewhere, but leave the country in a different way, lets say by bus. can this be a big problem?

This will not be a problem. You need it for the visa to be issued and not for immigration which only cares if you have overstayed your visa.
