Converting a tourist visa into a business visa - possible?

Dear guys,

I hope you can help me in the situation I am facing. I came to China with a tourist visa, double entry 30+30 days of stay.
I am an Italian citizen and I am currently on my second entry. I have around 3 weeks left.
In case I get some part-time jobs opportunities, how should I handle the visas? And in particular:
1. Is it possible to convert a tourist visa into a business visa while staying in China? How?
2. If yes, does the duration of stays and number of entries re-start the counting?
3. If no, what is the best option you suggest to handle this situation? Perhaps going to Hong Kong and applying for the visa there? One agency told me that I could have a hard time applying for a visa in HK in my situation.

But I would like to avoid going back to Italy.

I know that a working visa is the right solution, but unfortunately it is very hard to get.

1. It's possible to convert a tourist visa into a business visa at the Chinese Exit and Entry Administration in the city you currently stay. You may need to submit your passport, an application form, photo, a copy of your temporary residence registration form, and an invitation letter from the company.
2. If you get a business visa, the duration of stays restart.
3. You can first try to convert the visa at the EEA. If you failed, you need to go to the HK or another country to apply for an M or Z visa.
