About:72-Hour Visa-Free Transit

if i land in Shanghai on the 13th- what is the min+ max number of days i could stay?

I will have a proper stop over in Shanghai - as it works out cheaper before flying to NZ. I would be coming from the UAE. The visa restrictions are different for Beijing and SHanghai. Shanghai works out cheaper- so how long do I need to stay or can i stay in Shanghai before catching a flight to NZ?

The 144 hours starts at midnight on the day after the day of arrival. If you arrive on the 13th then you must leave before 23:59 on the 19th. It is the same for Beijing and Shanghai. It is not a visa. If you have 2 stops in China you are strictly limited to 24 hours.
