Hey so I'm travelling from uk to bkk via shanghai pudong wondering if I can leave the airport and if so where do I go and what documents do I present? I arrive at 7am in shanghai and leave at 10pm the same day then on returning home I arrive back to Shanghai at 8am and leave at 2am the next day could I do the same?

If you are travelling without a Chinese visa, then leaving the airport at Shanghai depends on whether the immigration officer issues you a temporary entry permit. You can try, but it's not guaranteed to be granted.
