Ambrose, it is 144 hour visa free transit that has replaced 72 hour visa free transit in Shanghai a couple of years ago. Also, it is not "72/144 hour visa", but visa free transit. In other words, there is no visa at all.
Your itinerary:
Amsterdam - Shanghai - Seoul
Under the condition that don't have any other stop within China is definitely eligible for 144 hour visa free transit and you can definitely arrive to Pudong and depart from Hongqiao airport. I have done it, you can do it too.
You should print out your flight tickets and have those printouts with you. You will declare at check-in in Amsterdam that you will travel to Seoul via Shanghai using 144 hour visa free transit. You will present your tickets and after a short inspection, you will be allowed to board the plane.
Upon arrival in Shanghai Pudong, you will approach 144 hour visa free transit where you will fill out the blue form and after that you will hand out your flight tickets and your passport along with filled out forms to Chinese authorities. After a short inspection, you will get a sticker in your passport for free and you will be allowed to exit the airport and to enjoy your 6 days in the city and the surroundings absolutely visa free.
When your stay in Shanghai is over, you will just arrive at Hongqiao airport from where you will depart to Seoul.
One more detail... It is advisable to have at least booked the first overnight and to have a confirmation for that in printout because there are several questions in the form about your accommodation in Shanghai.
