About:72-Hour Visa-Free Transit

Me and my wife are American citizens. We are going to Nepal with transits through China.

We should be fine on the way there but on the way back we have a layover in kumming for around 15 hours and then fly to shanghai with a layover of around 21 hours. What kind of visa do we need to get?

You definitely need a visa obtained in advance because your return flight itinerary has exceeded 24 hours and it cannot be eligible for any kind of visa free transit scheme. Having in mind that you will have to obtain your visa in advance, I would sincerely suggest you to obtain a long term (10 years), multiple entry Chinese tourist (L) visa because US citizens are entitled for one at the price that is basically similar or even the same as the price for a transit (G) visa that would cover only this journey through China one way. Do yourself a favor and obtain the mentioned 10 year multiple entry tourist (L) visa and travel with complete peace of mind.
