I will assume that you will arrive in Beijing from a country different than China and Japan, probably from Canada. This is a prerequisite to be eligible for any kind of visa free transit in China!
1) Your layover in Beijing is qualified for 24 hour visa free transit because you will be less than 24 hours in transit. On board the plane you will receive a yellow, arrival/departure card and upon your landing, after you approach 24/144 counter, you will fill out another form that is located next to the counter
2) You are definitely advised to book your accommodation in advance and to have a confirmation in hard copy with you. Whether you will have to collect your luggage or not depends entirely upon your airline. Maybe, if you fly on a single (through) ticket, your luggage will be check all the way to Osaka. In my opinion, this will be the case, but I really cannot confirm or deny that. You will know detail for certain during your check-in in Canada.
3) For your trip back home, you will be covered again by 24 hour visa free transit and if you are traveling on a single ticket and having in mind your short layover, the chances that your luggage will be checked all the way to Vancouver are practically certain. Also, you will remain in the transit section of the airport.
