I then go back to Sydney after Chicago - a week later. Is that still ok?

If your itinerary is:
Sydney - Beijing - Chicago
And if those are your only stops within your itinerary, you are definitely eligible for 144 hour visa free transit in Beijing.

Of course, it is. You are definitely allowed to travel visa free on the same route back, but again, those should be your only stops.
