Both of your itineraries are eligible for visa free transit in Shanghai. The first one will be definitely eligible for 24 hour visa free transit and the second one for 24 or 144 hour visa free transit in relation to your entire transit time needed in Shanghai, from your scheduled arrival from Seoul until your scheduled departure from Shanghai. In any case, you are fine and you can travel visa free.
Anyway, your main problem will not be these visa subjects, but your very short connecting time in Shanghai. In theory, you can catch your flight, but in reality 2 hours are really so short time and beside the mentioned, you are flying on two separate tickets. This means that you will have to apply for a 24 hour free entry permit upon your landing in Shanghai. After that, you will really have to run to immigration, then to collect your luggage, then customs, then new check-in, then security, then immigration and then a run to your gate. Very, very risky.
