No, you cannot use any kind of visa free transit options with the itinerary:
Australia - Xiamen - Australia
You can become eligible by introducing a third country or territory, for example Hong Kong or Singapore or some other destination and that will allow you to be eligible for 144 hour visa free transit in Xiamen.
Australia - Xiamen - Hong Kong - Australia
The above is one example of eligible itinerary.
Beside the mentioned you are eligible with your original itinerary for 3 day Xiamen visa on arrival. This visa is obtained upon arrival at Xiamen airport and its validity starts from the next day of arrival. In other words, your stay can be even a bit longer than 3 days if your arriving flight arrives in Xiamen in the morning and your departing flight departs late on the third day. Please, keep in mind that your flights to and from Xiamen are not allowed to have any other stop within mainland China.
