One night too much... Well, you can create an itinerary, something like this:

UK - Guangzhou - Hong Kong

This itinerary is eligible for 144 hour visa free transit, so it allows you to stay for 6 night in Foshan and after that you can continue by train or plane to Hong Kong.

So, if you could reduce your itinerary to 6 nights in Foshan and after that to travel to Hong Kong, you could do it without visa.

In case that you really need 7 nights stay, then you will have to obtain a Chinese visa in advance. In that case, you really don't have to bother about the eligibility of your itinerary for visa free transit.
