Please help - residence perment for just 2 days work? Won't get passport back for weeks?

Please help.
Do I need a residence permit to work even if only for 2 days? Or just a Z visa?
I've been asked to deliver 2 days of training in China. I intended to stay on mainland china for 1 week (2 days of work + few days explore), then travel to hong kong to see a friend (for 1 week), and then go somewhere on holiday for another week.
Please help me understand the info about residence application. If they take my passport for the residence application, and then hold it for multiple days (or even weeks?!) I won't be able to leave the mainland until I get my passport back?
