Lionel, I'm sorry to say that you will need a visa for your itinerary France - Beijing - Shenzhen - Hong Kong.

The problem here is the fact that it is not allowed to use 24 hour visa free transit if arriving in Shenzhen for later transit to Hong Kong. Also, you are not allowed to apply for a Shenzhen VOA since your arrival in Shenzhen will be via Beijing and that is not allowed. Only direct arrivals to Shenzhen are allowed for VOA applications. Also, it is not possible to use 144 hour visa free transit because your stop in Beijing limits you to 24 hour only.

If you have some possibility (ticket flexibility), you should definitely try to change your flights or if you have some time, just apply for a Chinese visa. After you use this visa and arrive in Hong Kong, you will be then free to travel back to the border and apply for Shenzhen VOA.

Unfortunately, this stop in Beijing has ruined all your visa free transit options along with the rule that you cannot use 24 hour visa free transit in Shenzhen if you wish to proceed to Hong Kong & Macau. Anyway, I'm more than certain that you can obtain a visa until August 3. Just apply as soon as possible, at least using rush visa option. You should contact ASAP one of CVASC offices in France. They are located in Paris, Lyon, Strasbourg and Marseille. Start today!

Among the two itineraries you have mentioned, only the first one is eligible. Anyway, by using the first itinerary, you are able to enjoy 144 hour visa free transit, but in Beijing. So far what I have understood is that you are interested to do something in and around Shenzhen. OK, you can travel visa free via Beijing to Hong Kong and after that you can travel to Shenzhen by obtaining Shenzhen VOA that costs 168 CNY for French citizens. After that, you will have to return to Hong Kong or to proceed from Shenzhen to some other, foreign country, but you cannot do that via Beijing. It has to be a direct flight out of Shenzhen, but without any stop within mainland China. This is the reason why your second itinerary is not eligible.
