You should always begin with your itinerary. It has to be eligible and you need all the tickets in hard copy in your hand, ready to be shown to the relevant authorities. Of course, your citizenship has to be eligible.
If all the above is fine, you will arrive at the check-in counter in the country from where you will fly to China and you will tell them that you intend to fly to X country (it has to be different from both the country from where you will depart to China and from China, of course) via China, i.e. Beijing using 144 hours visa free transit. In the same time you will show them the tickets as a proof that you are eligible. The airport staff will check the details and you will get your boarding passes.
On board the plane you will get arrival/departure card that you will fill out and keep it with you. Upon landing you will almost immediately see the signs directing you toward the counter where the officials handle the requests for visa free transit in China. There you will fill out the blue form and after that approach to counter. You will tell practically the same thing as you have told at the check-in and after the Chinese immigration take a look at your documents, you will get a sticker in your passport and be allowed to leave the airport. After that you will just follow the signs to collect your luggage and to clear the rest of the formalities, like customs and that's it.
