(Wednesday - Friday daytime exploring the area, Perhaps a trip to Beijing)

John, your itinerary of USA - Shanghai - Incheon South Korea can enjoy 24/ 144h visa exemption transit. But your return trip is not eligible for 144h transit without visa. Therefore, you may need to apply for single entry transit visa in China.
