Does Hong Kong count as a seperate country?

Route: Canada > Beijing (72 hrs) > Hong Kong (1 week) > Vietnam

Is the 72 hrs visa in Beijing applicable?

Your itinerary, in case that you have mentioned all your stops, is definitely eligible for 144 hours visa free transit in Beijing. 144 hours has replaced 72 hours in Beijing a couple of years ago. By the way, Hong Kong is treated as the third country within the set of rules for visa free transit within mainland China in the same way as two other Chinese territories, Taiwan and Macau.
