About:24-Hour Visa-Free Transit

For US passport holder, can I get a type of transit visa or free entry permit for China?

We will be on a cruise starting in Singapore, stops in Thailand, Vietnam, Hong Kong, Taiwan, Japan, Korea and ending in Shanghai.
Staying in Shanghai for the day and a flight out the same evening.

And with this above itinerary, would the China visa be different if we flew into Beijing for a day or two, basically a layover in Beijing on the way to Singapore

In case that you plan to stay in Shanghai where your cruise ends, you are allowed to make it as long as 144 hours, because in case that you plan to fly out of China from Shanghai to any third country beside South Korea, you are perfectly eligible for 144 hours visa free transit. Also, if you intend to fly out of China within a day when you have arrived in Shanghai to a third country beside South Korea and that your entire transit from your scheduled arrival by cruise and your scheduled departure from Shanghai is less than 24 hours, you will be covered by 24 hours visa free transit.

Anyway, in case that you plan to visit also Beijing from Shanghai, you would need a Chinese visa obtained in advance. The reason is simple, if you travel through two different transit zones within mainland China, you are allowed to spend on such a travel just up to 24 hours. If you need more time, then visa is required.
