New Zealand Passport to Shanghai

New Zealand Passport from Auckland - Shanghai - Melbourne - Auckland, could we get 144 hour transit?

Yes that's fine as long as new Zealand to Shanghai is non stop and doesn't also travel through Australia

If you only go through Australia once then you are fine
New Zealand - Shanghai - Australia - New Zealand is allowed

If you go through Australia twice then you need visa
New Zealand - Australia (even for 1 minute) - Shanghai - Australia - New Zealand is not
