so will I have any problems entering shanghai with a one way ticket if I have my chines visa and passport

No, you won't. In case that a Chinese visa is already granted and the sticker is in the passport, you will enter China without any problem. Anyway, you should have a kind of explanation ready, just for a case... For example, if asked, you can say that you plan to slowly travel by trains to Hong Kong or similar and to fly from there to Thailand or somwhere else. You will be fine, you'll see.
