This is not a problem at all. First of all you should have your flight tickets in hard copy (print out your ticket email confirmation), ready to present them to immigration authorities at Beijing airport. It is also advisable to have your accommodation booking in hard copy too because you will have an overnight in some hotel or similar. You will apply for 24 hours free entry permit upon your landing in Beijing and you will be granted one because you will have to collect your luggage and tomorrow make new check-in for your next flight to Mongolia. After this short formality, you will be allowed to exit the airport. Having all boarding passes is not a condition for visa free transit.
