British Passport holder Hong Kong then Chongqing visit

I am travelling to Hong Kong arriving 1st Sep 2019 then on the 4th September flying to Chongqing returning via Hong Kong on the 14th. What date do i need to put on my visa application - should it be 1st September when I arrive in Hong Kong or the 4th when I arrive in Chongqing. Is this a 1 entry visa.

You should put in September 4th, when you first enter mainland China. A single entry is enough for your visit. HK grants visa-free stay for UK citizens.
