About:240-Hour Visa-Free Transit

Barcelona(Spain) - Shanghai - Barcelona(Spain)

Is the itinerary Barcelona(Spain) - Shanghai - Barcelona(Spain) eligible?
I have doubts because A and C are the same country.

Your doubts are correct, TWOV doesn't work this way.

But, if I fly from Barcelona to Shanghai via Paris (that is, I have connecting flights Barcelona - Paris - Shanghai), does this count as flying from France?

You can correct your flight itinerary by flying to Shanghai from some other country, for example France, and return to Barcelona. Using this way, you would be perfectly eligible.

Yes. Only the stops immediately before and immediately after China are relevant.
