About:240-hour Visa-free Transit in Shanghai, Zhejiang, and Jiangsu

We are coming from Australia and overnight transiting in Hong Kong

then flying to Shanghai for 3 nights and the on to London. Are we able to apply for the 144 hour visa?

Yes, you are perfectly qualified for 144 hours visa free transit. Hong Kong is considered as a third country for 144 hours visa free transit. All you have to take care of is that your flight from SH to London does not have any additional landing within mainland China.
