OK, in case that your layover is just a minute longer that 24 hours, you will have to apply for G transit visa in advance. Quite contrary, if your layover is a minute less than 24 hours and all this based on your formal scheduled arrival and your scheduled departure from Shanghai airport, you are covered by 24 hours visa free transit. In case that your layover is exactly 24 hours in a minute, you are still fine for 24 hours visa free transit.
Regarding your luggage everything depends on your ticket and the airlines you use for your entire tripe. In case that you fly by one or codeshare airlines, you will probably be free from handling your luggage in Shanghai by yourself, but if you use different airlines and have separate tickets for any of the segment of your flight from Canada until Vietnam, you will almost for sure have to collect your luggage and make a recheck-in. This is not a problem since you have quite enough time at your disposal.
