About:72-Hour Visa-Free Transit

Not a layover

Do you need a visa if you are flying from USA and just visiting for 3 days then returning to USA. Not going anywhere else except the city you are flying into (beijing)

Unfortunately, this is impossible. Arriving to China form one country and returning to the same country is not a transit, but a visit to China.

Anyway, you could buy a ticket using multi-city option (so called open jaw ticket) where you will fly from US to Beijing and after that from Hong Kong back to US. Between Beijing and Hong Kong you can take a flight offered by mainland Chinese or Hong Kong airlines. This option would allow you to stay in Beijing up to 144 hours (6 days).
