About:240-hour Visa-free Transit in Shanghai, Zhejiang, and Jiangsu

if I fly back on a long stop-over in a third country (where I would actually get out of airport) ?

If I fly back home from Shanghai with Emirates and do a stop over in Dubai where I actually clear customs, hence get out of the airport and spend a night in Dubai, will that allow me to enter China on a 144 visa-free entry permission ?

It depends where you stopped immediately before Shanghai. If you fly Dubai-Shanghai-Dubai you need a visa. It's irrelevant whether you clear immigration or stopover.

immediately before SH it would be Taipei.
Milan-Taipei via Dubai few days in Taipei then Taipei-SH, few days in SH then SH-Dubai, one day in Dubai (with hotel reservation to show), finally Dubai-Milan.
Do I qualify ?

Thus your travel route is Milan - Dubai - Taipei - Shanghai - Dubai - Milan, right? If yes, you can enjoy the 144 hours visa free policy in Shanghai.
