About:144-Hour Visa-Free Transit

144-hour Visa-free Transit in Chengdu

If I arrive in Chengdu from Amsterdam at 13.45 hr on Thursday Nov 7th and my flight out to Sydney is not until 01.00 the following Thursday Nov 14 this totals 145 hours. is this acceptable?

That is a day over the permitted period of 6 days/144 hours. Duration of stay does start from the second day of arrival so in your case it's 12:01am on the 8th, but you do have to leave by 11:59pm on the 13th. Your flight does not depart until the 14th which means you must get a visa or change to a flight that departs on the 13th.
