144 hr transit query in Shanghai

Hello, My itinerary is:

London- Doha where I will stop for 3 days. I will then carry onto Shanghai from Doha. My return journey is Shanghai - London with a 2hr connection in Doha. Does that make me eligible as in theory I am coming from Doha and third country is UK?

If this is not OK can I buy a round trip Shanghai to Hong Kong then get my regular flight back to London. Thanks

No, it is not ok. If you buy a round trip to HK then back to London, you can enjoy the 144 hours visa free policy.

Can I ask why it is not ok? My return ticket is Shanghai-London on one ticket so surely that makes my ticket Doha-Shanghai-London? Thanks

Your route is London-Doha-Shanghai-Doha-London, right? Because country A and C should be different countries or regions out of Mainland China. According to your route, the country A and C both are Doha. Thus you cannot enjoy this policy.
