About:72-Hour Visa-Free Transit

Separate tickets. Hello. I'm flying into Shanghai on United Airlines from New York.

I will fly out of Shanghai bound for Bangkok on Thai Airways - on a separate ticket from my inbound flight (bought separately). Do I qualify and, if so, how many hours? Thank you!

Yes. The authorized period of stay is either 24 hours or 144 hours depending on how much time you have for your layover. Normally you will have the 24-hour permit if it's under 24 hours, or the 144-hour permit if it's greater than 24 hours.
