Single or Multiple entries needed if multiple port stops while on cruise?

We will be visiting China while on an Asia cruise (along with other countries), if we will make more than one stop in China, including Hong Kong, do we need a single or multiple entry visa? Thank you.

If you have a US Passport you want the 10 year multiple entry as its same cost as single entry. Hong Kong is not considered China so if you only stop in HK then no visa needed up to 90 days.
