About:Shanghai Transportation

We are Canadians flying Vancouver to HK with a 10 hour stopover in Shanghai.

Will we be able to leave the airport after clearing immigration and will we need to pick up our checked luggage? We will travel to HK on the same airline. Also, will 10 hours be enough time to go into the city for a while? We will need time to check in again. Thanks.

No, you don't need to pick up your luggage. You need to reserve 2 hours at least for boarding the connecting flight. And the transportation to the downtown for a round trip needs about 3.5 hours. So you have 4.5 - 5 hours for sightseeing. You are advised to take a visit to People's Square, Nanjing pedestrian street or the Bund.
