About:240-Hour Visa-Free Transit

Urgent: Is it possible to visit on 144 hour twov with following trip..

Dep France Nov 10, change planes in Amsterdam, then flight to Shanghai, arriving at 10 am on Nov 11.

Dep Shanghai Nov 16 at 00:10 (so just after midnight of Nov 15), fly to Paris, arriving same day

I have US passport and French residency.

If those are your only stops, AMS-SHA-PAR is clearly a valid route for 144 hours transit without visa. Note that AMS-SHA-AMS-PAR would not be valid.
