Part 1:
This is easy to resolve exactly in the way you have suggested. In reality, your itinerary final, comprehensive itinerary look would be:
US -> Hong Kong -> Guangzhou -> Macau -> Guangzhou -> Hong Kong -> US
Like this, you will have two 240 hour visa free transit itineraries:
1. (US ->) Hong Kong -> Guangzhou -> Macau
2. Macau -> Guangzhou -> Hong Kong (-> US)
This is definitely acceptable and eligible for 240 hour visa free transit scheme.
You will have to take care about your exit ticket from Guangzhou to Macau before you depart from US (Hong Kong) because you will be asked to present your Guangzhou to Macau ticket in both Hong Kong (maybe even in US) and upon your landing in Guangzhou. Here the best and practically the only option is to take a train from Guangzhou to Futain station in Shenzhen, from there to take a taxi to Shekou cruise (port) center and from there by ferry to Macau. In other words, the essence is on a ferry ticket from Shenzhen (Shekou port) to Macau. This ticket will have to be bought ahead of your departure from US to Guangzhou. You can buy it through official TurboJet ferry website or through some other reliable websites that sell the tickets on this route. When you arrive in Macau, you can return back to Shenzhen (Shekou) by ferry and return to Guangzhou using the same transport scheme as you have done from Guangzhou to Macau. When traveling from Macau to Shenzhen you will present your flight ticket Guangzhou . Hong Kong - US. One word of warning... When you arrive in Shenzhen (Shekou port) do not queue at Shekou visa office because you will see there people queuing for Shenzhen 5 day visa on arrival. This is not for you, but you will look for 24/240 hour visa free transit / temporary entry permit.
